October 5, 2018 – Florence
Today was great fun. I had signed up for a Market Tour and Cooking class. At 9am our group met and headed to the Central Market. Manish, our guide, took us around and explained about many regional meats and cheeses. After this we went to the Diadema Cooking School and met Chef Alain. He started by showing us how he makes a Bolognese sauce, a cherry tomato sauce, and an Alfredo sauce. These were taken out to the kitchen to cook while we made the rest of the meal. First we were taught to make tiramisu and then made our own. Next we were shown how to make pasta dough. After we each made our dough and set it aside to rest, we sampled wine and bread with different toppings. When the dough was rested enough we were shown how to roll it out and cut it for Tagliatelle and Ravioli. My pictures will show how I did. They cooked our pasta and served it with the sauces that Chef Alain had made. Finally we all got diplomas of proficiency in Italian Cooking.
I took pictures while I made my tiramisu and pasta but was so anxious to eat that I have no pictures of the finished meals.
Tomorrow I am up early to take a train to Milan and then a train to Bern. I won’t get to my hotel until after 3pm so no blog tomorrow.
